I think it's a good idea for all us us to say what we ate today, a simple way to spread ideas ;D I'll start Breakfast:#2 weetabix in soya milk #1 slice wholemeal seedy toast with Udo's choice oil and marmite #1 plum Lunch:#vegetable soup #2 slices seedy bread with Udo's oil Dinner:#1/2 avocado with grated carrot and tahini #jacket spuds with miso, nori sprinkles and chives #pot barley with roasted yellow and red peppers, tomatos, sage, chives and nori sprinkles #carrot and cucumber Snacks:#apple #couple of squares of Plamil hazelnut "chocolate" Drinks:#water #alpro soya light (trust me tastes better than sugary! Its more neutral and biscuity) #apple juice and I'm not done for today's eating but I cba to list it I'll probably have a bowl of oats and maybe fruit

Yesterday I had banana and raisin porridge with cinnamon, nutmeg and maple syrup (shared with my daughter who was 1 yesterday!) Then we went to the Japanese noodle bar in Cardiff where we shared vegetable udon, avocado sushi and miso soup... utterly utterly yum Then for dinner, scrambled tofu on wholemeal toast with spinach And a big bowl of Swedish Glace with warm choc sauce! It was a good day

Yesterday I had homemade granola and soy milk for brekkie and a banana. Lunch was homemade hummus and carrot sandwich and dinner was mushroom stroganoff with mashed potatoes - which was comfort food at it's best! And some mango/coconut cake for pudding that i made the other night.
Today I had a homemade muffin for brekkie and just had macaroni and 'cheese' sauce, with cut up vegan sausage in and hedgehog bread. it was good.

Porridge for breakfast (How disgusting!), fruit for morning tea, carrot soup and scones for lunch, chocolate chip biscuit for afternoon tea, and that's all so far. I ain't vegan yet, I'm sorry to say ;_;

Ah! you could have been vegan and still eaten all that. Although good luck with the scones. I tried to make vegan scones and they were so bullet like I was tempted to use them as weapons to attack my ex husband with. However, scones can be done really successfully. Just not by me.....

I just had my breakfast: chocolate pudding. I had to cook for a group of people last Saturday and I had lots of leftovers, including the chocolate pudding (with corn starch and agar-agar). So that will be my breakfast and dessert this week, I suppose. Maybe I will make myself some porridge for lunch today. I always feel like eating poridge when the weather is awful and the rain has not stopped pouring since last night, I think. I do not need to get out today except for some greens for the guinea pigs and rabbit. I can do that at the supermarket nearby. I take a bowl full of soya milk and five tablespoons of rolled oats, millet flakes or a mix of both. I add a package of vanilla sugar and a tablespoon of oat brans. Raisins add sweetness, iron and fiber, so I may use them as well sometimes. You do not need extra sugar that way. Taste well sprinked with grated coconut. I do not have any coconut in the house, but I may buy some as I have to buy the greens for the animals and the humans.

For lunch we had mushroom risotto which was nice and warming, but missing something we both felt. Bananas and custard for pud (I didnt put enough sugar in the custard though) I am making a birthday cake for Spawn tonight. He wants lemon cake with regal icing, but no marzipan. I am going to glaze it with some lemony jam that I found and sandwich it with lemon icing. Hope it works ok. He is 18 years old today. Cant believe my baby is 18....

Made Spawn's birthday cake. It looks ok at the moment. Im just hoping the glaze wont leak through the icing as there is no marzipan in it.

It did taste nice actually. Very lemony! and the icing stayed stuck really well, considering there was only lemon jam underneath it.

That sounds lovely Tab. I had baked potatos with cream cheeze and fresh chives, stuffed mushrooms, baked tomatoes and broccoli. Now THAT I could quite happily eat every day! Sounds gorgeous. The kids were too ill to eat the birthday cake Pob and I had two slices each. It was nice. Ive given it to them to take home, but I cant see them eating it to be honest. I told my mum this and she said "why dont you buy them a shop cake next time!" as if it was my bloody vegan cake that was the trouble! grrrrrr
