Yummiest Chocolate Cake Ever Equipment: springform pans, 2 good sized bowls, a wisk, saucepan Ingredients1 and 3/4 cups of Dove's Farm Spelt flour or any wholemeal flour,2 teasthingys baking powder,1 teasthingy baking soda,3/4 cup good cocoa powder,1/2 teasthingy salt,1 cup plain soymil,1/2 cup vegetable oil,1 1/2 cups pure maple syru,1 teasthingy apple cider vinegar,2 teasthingys vanilla flavouring. DirectionsPreheat oven to 350 F. Spray a 9 inch springform pan with non stick cooking spray.Sift together flours and baking powder and baking soda.In a saucepan, heat the soymilk on low-medium heat. When it is slightly bubbling, add the cocoa powder and wisk well until it is dissolved. Remove from heat.Combine the other liquid ingredients in a bowl and whisk well. Add the cocoa mixture and combine. Add the wet ingredients to the dry.Pour batter into prepared pan, bake at 350 F for 25 minutes until a toothpick or a knife comes out clean. Let cool completely.Make TWO of these cakes then decorate with the below... Chocolate buttercream Put 6 ounces of margerine in a bowl,soften with a fork then gradually add 18 ounces of sieved icing sugar,mix well then add 2 ounces of melted chocolate and mix.Spread a little between the 2 layers and smother the rest of the cake with it. Then decorate with brown and white chocolate chips and home made hazelnut chocolate truffles. Chocolate truffles 1 1/2 cups vegan chocolate chips 8 oz. tofu cream cheese 3 cups of icing sugar 1 1/2 t. vanilla finely chopped hazelnuts Place the chocolate chips in the top of a double boiler, over medium heat, and leave to melt. In a food processor, place the vegan cream cheese, and process for 1 minute or until smooth and creamy. Add half of the powdered sugar and process for 30 seconds. Add the remaining powdered sugar and continue to process the mixture until well blended. Add the melted chocolate chips and vanilla, and process the mixture to evenly distribute the melted chocolate. Transfer the mixture to a glass bowl, cover, and place in the refrigerator to chill for 1 hour. Using your hands, shape the chilled mixture into 1-inch balls. Roll the balls in the garnish to thoroughly coat them on all sides. I made the above on the special occassion of my son's birthday but even on its own the above sponge recipe tastes out of this world due to the use of maple syrup instead of dry sugar. I especially love to try out unusual recipes(I know what is unusual in one place is commonplace in another) and my most recent attempts at these have been zuchinni/courgette cake,parsnip cake,cornbread made with coconut milk,ethical cola cake and marmalde cake(I will post the recipes for these later on in this thread) Ruthie

(1.7 Oz) almond/hazelnut/ apricot amygdalin – finely ground/powdered nuts 8 Tbl. Spoon unrefined sugar 3 Tbl. Spoon soy cheese (mild flavored, creamy, or melted) - here in France it's like a neutral 'sore cream'.. will have to find a pic of it... for next time so you know what I'm talking about.... 3 Tbl. Cocoa powder ¼ litter (8.5 fluid ounces = 1 usa cup) soy milk 200 gr. (7.5 Oz) dried figs (chop or cut into bite size pieces) 14 dried dates (remove seeds, chop or cut into bite size pieces) 55 gr. (2 Oz) baking soda 1. Mix in all the ingredients into a batter. 2. Transfer to a pre-oiled & floured baking pan with 28 cms (10.9 inches) diameter. 3. Even the batter. 4. Possible to decorate with 2 dates + half a fig, in the center ; and 4 Tbl spoons sugar, sprinkled on the entire surface. 5. Let stand for 45 minutes. 6. Heat in the oven for 50 minutes at 200° C (392° F) 7. Let cool for 10 minutes & transfer to a plate, upside down. 8. After another 10 min. Turn right side up. 9. Hi, Am not sure who said to be a 'hopeless cook'... I can't tell as the names & posts don't seem aligned right now... how to read them ?! but rest assured, am not a professional cook, just an inventer... Took me a few moments to decide what to use & then I did it & whoa was it YUMMI so ... don't be hard on yourself & believe you can do it & you'll see things come easier with practice & a positive attitude

Oh oh... with my wife, we just found out the real name of 1 of the ingreditents in the ChocoFigaDate cake. It was baking powder not soda...Chocofigadate cake
Batter :

Ingedients of this cheese are :
Soy juice (water, soy seeds 11%) prebiotics including lactobacillus acidophilus
lactobacillus acidophilus source is natural & not dairy. The cheese I used is organic & made by the brand Bonneterre.

The original recipe called for a chocolate cake, but since I didn't have the right sized pan, I went with cupcakes: They came out really good the second time I made them! The only things that messed up my first batch, were: Running low on sugar and using about 3/4 cup, Forgetting to add salt - may have effected texture, I didn't use the right kind of cupcake cups and the cupcakes stuck to them. Anyway, for tips, I think that brown sugar and unbleached or whole wheat flour works the best. For frosting, I didn't have many ingredients to work with, so I had to find a simple frosting recipe. I actually toyed with one recipe and it came out really well! Peanut Butter frosting: Take roughly 1/2 cup of powdered sugar, add just a little bit of soy/rice/non-dairy milk and mix well. Once you have a creamy consistency, add about one teaspoon of peanut butter and continue to mix well. It's all ready to go! I chilled mine a bit and it was SO yummy! The original recipe called for vanilla frosting, but I think the cheap vanilla extract that I used, didn't come out too well. This recipe is actually low-fat, but is high in sugar... *one note: I just took a few heaping spoonfuls of powdered sugar and added slight amounts of non-dairy milk to get the right consistency...then I added peanut butter for flavoring. The measurements are approximate, so just toy around with it, depending on the flavor and consistency that you want! ALSO: it made 12 cupcakes. Enjoy!!!

oooooohh people i have just baked THE most delicious chocolate cookies ever, simply HAVE to share and spread the joy!!
125g veggie marg 125g caster sugar 125g dark brown sugar 1 tbsp veg oil 2 tbsp cocoa powder a dash of vanilla extract a sprinkling of nutmeg & cinamon
... cream the above together until 'fluffly' (well, until mixed)
add 150g rye flour and 1/2 tsp bicarb of soda, mixy mixy if you want, add raisins/whatever else
roll into balls, space weeellll apart on a baking tray, but in a preheated oven at gas mark 4 for about 20 mins (my oven is dying, so check after about 15), until they're cracked on top and look pretty cooked
take out of the oven, and LEAVE on the tray for about 5 mins, THEN take them off and put on a cooling rack, whilst you bake the rest
yum yum ;D
