Easy Recipe.
Makes 12 muffins (or mini bunt cakes)
Prep time: 20 - 30 min
Baking time: 20 - 30 min.Ingredients:275 g (approx 1 & 1/2 c) whole-wheat flour
175 g (approx 3/4 c) sugar
200 ml (approx 3/4 c) soy milk
100 ml (approx 1/2 c) oil
approx. 1/2 cup diced apple
(about 1 large, or 2 very small apples)
1 Tbs baking powder
2 g (approx. 1/2 tsp) powdered agar-agar
(or other binding product, equivalent to 1 egg)
1 tsp vanilla
1 Tbs cinnamon
1/2 tsp nutmeg
pinch of anise
You will also need:-- large mixing bowl
-- mixing spoon or spatula
-- knife and cutting board or food processor (for dicing the apples)
-- muffin (or mini bunt cake) moulds ... I highly recommend silicon moulds!
-- cooling racks or heat-resistant plaques
Directions: 1.) Mix everything in a large bowl
2.) Spoon batter into muffin mould (filling a little over 1/2 way)
3.) Bake at 200°C (392° F) for 20-30 min.
4.) Cool completely before removing from the mould

For the Optional Topping: Ingredients:approx. 1/2 cup diced apple
1/4 cup sugar
1/4 cup crushed or chopped walnuts
1 tsp oil
dash of cinnamon
2 g (approx. 1/2 tsp) agar-agar powder
(or other binding product, equivalent to 1 egg)
You will also need:-- small sauce pan
-- spoon for stirring
-- knife and cutting board or food processor (for dicing apples)
Directions:1.) Mix everything, except the agar-agar, into a small sauce pan
2.) Stir frequently, on med-low heat until apples are soft
3.) Add agar-agar, and heat on low, about 5 min.
4.) Immediately, spoon onto cooled muffins
