i get home from getting ds from nursery at 11:50 and they are used to eating at 12 so i need some quick lunches to replace cheese toasties, cheese rolls, macaroni cheese etc. he loves cheese if you hadnt guessed but id love us to all go vegan!

Cheezly Super Melting Mozzarella, which you can buy from health food stores, is a nice mild soya cheese that goes well in sandwiches, toasted or not. There are quite a few varieties of vegan "cheese", so if he doesn't like that one, he may enjoy some of the others.

we tried the cheddar cheezly and it was a bit rubbery so will try the mozarella one next. i also have some cheese thing in a tub thats powdery for cooking with. not tried that yet

I used to use that powder and was really keen on it. I find it a bit salty and tasteless these days and make my own sauce with cornflour, soya milk, yeast extract, onion powder, parsley, mustard powder, black pepper, nutritional yeast, smoked paprika.
Probably tastes nothing like real cheese sauce, but we like it.

35g cornflour 1 pint unsweetened soya milk teaspoon of dried parsley 1/4 teaspoon mustard powder teaspoon of onion powder (available with herbs in supermarkets)
mix dry ingredients together and make to a smooth paste with some of the soya milk. Meanwhile heat rest of milk to nearly boiling in a pan.
Pour hot milk on paste, stir well and return to pan. Stir in about 1/2 to 1 teaspoon yeast extract
Heat and stir until thickened Stir in a good load of nutritional yeast to taste.

ok ive got all the bits to try pobs sauce, also bought a tub of 'cheese' sauce and we have tried the mozarella cheezly. was much more appreciated than the cheddar one. i recently tried the nacho one too which i love!

I quite like the nacho one too, but it's too spicy for my son, so I tend to stick to the mozzarella.
