Mushroom & Onion Springrolls
(with side dishes: Fried Rice, Baked Sweet Veggies & Seaweed)
Baked Mushroom and Onion Spring Rolls
Savory, spicy springrolls, perfect as a main or side dish.
Prep time: about 30 - 40 min
Baking time: 10 - 15 min
(+ a few min under the grill/broiler)
Makes 4 rolls
Ingredients:
1 c mushrooms, chopped (a variety of types is always nice)
1/3 c tofu (diced into very small cubes, or crumbled)
2 green onions, chopped
2 Tbs soy sauce
1 tsp ginger powder
1 tsp garlic powder (or one small clove, mashed)
1/2 tsp chives, minced
2 pinches of sugar
dash of anise
black pepper, to taste
8 dried rice wrappers (large sized)
sesame or sunflower oil
Directions:
1.) Put everything, except the rice wrappers, into a frying pan or wok,
2.) Add a little oil, and stir-fry on medium heat, until the onions are just turning clear
3.) Place the 2 rice wrappers (one on top of the other) into a large tray or plate, and hydrate with a little hot water
4.) Rub a little oil onto a second tray/plate, and very carefully place wrappers onto it
5.) Spoon 1/4 of the mushroom mix into the center, in a semi-rectangular form
6.) Gently fold up the bottom edge, fold in the sides, then fold the top edge down.
7.) Rub a little oil onto the wrap (optional: sprinkle a little salt on the top)
8.) Rub a glass baking pan with oil (be generous), and place the wraps into it, side by side.
9.) Bake (in a pre-heated oven) at 250° C (475°F) for 10 - 15 minutes
10.) Place under grill (broil) on high heat for a few minutes, until the top begins to brown
Simple Fried Rice
Ingredients:
2 servings quick rice
2 Tbs oil
1 Tbs soy sauce
Directions:
1.) Evenly coat frying pan or wok with the oil and soy sauce
2.) Heat the uncooked rice in the pan/wok, on medium-high heat,
stirring frequently, until the rice is browned (about 7 min.)
3.) Cook the rice according to packet directions (boil or steam)

Sweet and savory, low fat, big flavour, super delicious!
Prep time: 15 min.
Bake time: 25 - 30 min.

1 yellow bell pepper
2 carrots
handful of leek greens
1/4 c dried seaweed (a variety of types is always nice)
2 Tbs oil
1 tsp sugar
dash of garlic powder
salt and black pepper, to taste
Directions:
1.) Cut the veggies into long strips
2.) Mix everything together and toss into a glass baking dish
3.) Bake (in pre-heated oven) at 250° C '(475°F) for 25 - 30 minutes
