A thermos flask of soup makes a good lunch especially when the weather's cold.

I've had several rubbish office jobs and lunch was pretty much always the highlight.
I generally cook for one so often take leftovers to work, so basically, anything!
samosas/springrolls are always good, pasta salads etc
but if it's sandwich idea your looking for then perhaps: -hummus, red grape & salad -redwoods sausages, watercress/baby spinach & mustard -nutroast & tomato -hummus, pickled beetroot & beansprouts (this looks awful but is dead tasty) -peanut butter & banana -falafal -vegeburger w/ avacado
one of my favourites is a black bean burrito w/ salad
that's it of the top of my head.

indians have these classic things, i'm not even indian, but i saw it on that taste tv program... it's like 3 layers of containers that keeps the food warm, costs about 15 / 20 quid. in the first one, starter, in the 2nd main and in the third pudding... it looks like a mini tower of pizza. check it out!! or just pitta / bread packed with houmous, caremalised red onion chutney, red peppers and salad leaves... always good!!

Soup is good, I just put all leftover veggies in a saucepan, cook and then blend. For me it has to be humous sandwiches. But I only get about 15mins for lunch so have to be able to eat it quickly!

a cous cous or rice sald is easy to knock up the night before and tastes just as good cold for lunch.

I do not vary much in my lunches at the office. I usually make tahini and marmite sandwiches. I have half an hour for my lunch, so rice or other leftovers are not such a good idea. It takes too long for me to eat them. I sprinkle a tablespoon or two of mixed seeds (pinenuts/sunflower seeds/pumpkin seeds etc) in between sandwiches for a little crunch and extra nutrients. I have a beaker of soy milk and a beaker of orange juice with my sandwiches.
At home, I may make tortilla's filled with tomato tapenade (vegan) or vegan mayonaise, vegan ham or other meat substitute and mixed lettuce leaves. Soups are also good. I buy Lima packaged soup. One goes for two smal bowls. They need a little extra flavouring in my opinion, so I add whatever I think tastes nice. Pumpkin/carrot soup tastes delicious with a little mango chutney. I think you can heat the soup and transfer it to a thermos flask for lunch, too.
If I want to add cucumber slices to my sandwiches, will they stay fresh in my lunchbox? It is always quite warm at the office and I do not know whether keeping sandwiches in the fridge is such a good idea. My mother always told me that they dry out in the fridge. Do they?
