Ingredients: 1 White onion, chopped 1-2 Cloves garlic, chopped finely 1 small courgette, chopped 1 medium tomato chopped 4-5 medium mushrooms, quartered 200ml plain yoghurt 1 tin braised tofu, drained, in bite size chunks mild curry powder cayenne powder small handful of sultanas mango chutney
Fry onions and courgettes for couple of minutes, then add garlic and fry for couple more minutes. Add tomato and cook until all the veg is soft.
Add tofu, mushrooms, yoghurt, sultanas and mix in well.
Add curry powder, cayenne, and mango chutney to taste, mix well and heat through.
We had it with pasta and salad (was enough for two people), but should work well with baked potato, or as a sandwich filling.
