So, I've bought organic tapioca & wowie it's way yummier than the regular one !
In the store, there was a lady who never heared of tapioca cooked with strawberries... so I told her how we make it & then, I went ahead & made a variation... and another one today...so, here I come share my tapioca recipes with you
this one is sweet as it's with a couple peaches (made another variation with also a banana today, which is the one in the picture)
so, it's very basic :
after washing the peaches, slice to any form you want, then in the pan (I used a small steel one), 100 gr (a bit over 3 Oz) of tapioca, and 300 ml soy milk - I used a vanilla flavored, you can always add vanilla to the mix or even to the vanilla milk, or not if you don't like vanilla), sugar (how sweet do you want it ? )
low fire (I did on an electrical one), and remember the key word with cooking tapioca : stir ! never let it on the fire for more than 15 seconds, it scorches really fast !
after 10 or 15 minutes, when the tapioca gets whity transparent & soft, it's ready to eat you can add more soy milk or yogurt to the result, or not, eat it hot or cold as you like
info : tapioca will drink about 3 times its volume liquid, so if you put too much tapioca, you'll have to add liquid (here soy milk but can be others too), and if you use too much liquid, you probably will end adding tapioca...
enjoy

this one is salty
first, wash & chop a tomato, a bit of cucamber (I used very little coz was for a small meal, but it's up to you on how much you use), and some leak.
second, after you oil a pan (just a bit, it's not a stir fry lol), add the veggies & cook them for about 7 to 10 minutes (varries on heat level & on how ready the veggies are). I added 2 table spoons of corn & about 60 gr (2 oz) of tofu, & spiced the whole with garlic, curry, curcuma (lots of them) & a dash of mint (all sprinkled). add a bit of oil on top to capture the flavors.
third, add about 150 ml soy milk (5 fl oz) & 50 gr tapioca (almost 2 oz) (make sure your fire isn't too high, for the reasons stated above)
after another 15 minutes or so of cooking on medium to low heat, and strirring a lot, it was ready !
and that was a mouthgazm ! so much, that I shortened my meal & kept some for my wife for tomorrow, as she had already eaten dinner by the time I started cooking LOL
enjoy
PS those small amounts were enough to serve one or two, so adapt for more needs.
One last remark : tapioca tends to harden really quick, but no alarm : even if you keep in the fridge & comes all hard, just add some liquid & stir, and voilĂ it's ready to eat again !

Unfortunately Wabbit, for those of us in the UK tapioca means just one thing; school dinners . Might take a bit of persuasion to get me to try it again ;D

Looks lovely. oh ya can bet'ya ! it was so delicious I could eat a whole pan of it lol, which is good since I got a couple cancre's in my lips right now (wife thinks it's due to my extra stress lately) & it's hard for me to eat solid stuff, so tapioca for the next couple days
