Fry off a chopped onion, couple cloves chopped garlic, chopped sweet pepper (I used half a green and half a yellow one).
Meanwhile start some wholewheat pasta cooking.
Once the onion has gone transparent and soft, throw in some chopped mushrooms and mix in, then stir in a tin of Marigold Braised Tofu, breaking it up as you stir it in. Then stir in a jar of Meridian Free From Creamy White Wine and Mushroom Sauce, season with a few twists of black peppr, and heat through.
When the pasta is cooked, drain and mix with the sauce.
It served 2 (with 150g of pasta). Would probably stretch to more people if served with salad and garlic bread, by using a bit more pasta.

I was pleasantly surprised how well it came out as I've never been too thrilled by the tinned tofu.

I love to eat that braised tofu from the can. Bought some more today. I hadn't realised it cost £1.79 Oh well, its worth it for something so gorgeous
