I'm not sure if this would be classed as a curry but I wasn't sure what else to call it. Anyway its really easy to make and tastes amazing.! First of all I simmered some frozen veg for about 5 mins. I used spinach, broccoli and cauliflower florets and green beans but you could use any combination of veg you fancy. At the same time I cut some tofu into cubes and fried it. After the veg had been simmering for 5 mins I drained the water before adding it to the wok with the tofu. I then added some whole cumin seeds, oregano and coriander and a jar of Coconut, Lime and Coriander Sauce from Sauces of Choice. I then stir fried the whole thing for a further 5 minutes. YUMMY!!!
