For Malckiera. A recipe promised from last week (or was it 2 weeks ago ?) This amount serves 1 human and 5 doglets ranging in size from collie to mini yorkie 1 leek, washed and shredded 2 Courgettes, washed and sliced 2 handfuls frozen green beans 2 handfuls frozen broad beans 2 handfuls frozen peas 1/2 bag baby spinach, washed 1 tsp low salt boouillion powder 2 tbsp vegan pesto, or a handful of fresh basil leaves roughly torn 1 tbsp tamari Cooked quinoa - white or red Heat a large pan, and add the leek, and a few tbsp water. Cover and allow to cook for a few mins, stirring occasionally. Add the courgette slices and a little more water if needed and cook for another few mins, until starting to look a little wilted. Add the frozen veg, cover and bring to a simmer, stirring from time to time. Add the bouillion powder, and cook covered for about 5 mins. Add the spinach, stir in, cover and cook for another 5 mins. Remove the lid and allow the liquid to mostly evaporate so the pan is nearly dry. Add as much cooked quinoa as you like, and the tamari and stir altogher. Add the pesto or basil and adjust seasoning to taste. I served this with a simple salad of cherry tomatoes and avocado, with just a drop of balsamic dressing, and a lot of crushed fresh garlic, and it was seriously yummy, but we did all wiff a bit the next day
