Just wondering what people's thoughts are on the healthiest oil to bake with, I've been using vegetable oil but wondering if summat else would be better?

Organic extra virgin olive oil for frying and roasting and most cooking.
Baking cakes and stuff, where the olive oil taste will be a problem, I use organic sunflower oil.

I use light and mild olive oil for baking - it's very pale compared to extra virgin

I agree with Pob, sunflower oil is best for baking. I don't know if its healthier but gives the best results tastewise. Not that I'm any good at baking cakes (I'm crap ), but a friend who makes gorgeous cakes told me this. For frying I use Fry Light one cal olive oil spray.

Olive oil is high in monounsaturated fats which are the healthiest kind. I like avocado oil too - it's also high in monos (and vitamin E) and has a high smoke point so it's really good for stir frys.
Sunflower or rape seed oil are high in polyunsaturated fats which are not quite as healthy as monos, but still not too bad. They have a lighter flavour and work well in baking.
Flaxseed oil contains omega oils 3, 6 & 9, which we need, but it loses its benefit if cooked, so this is best used in salad dressings or houmus.

I use a mix of olive and rapeseed oil (about a tablesppon each) in cooking and vegan margarine (Laitois) in baking. Flax and walnut oil in salads or just a splash on cooked items.
There is a brand called Amanprana that comes with a red palm/olive/coconut oil mix that is delicious in dishes like pan-fried potatoes and cubed tofu.
