This is a request for Pob to put his yummy "Vegan Shepherds Pie" recipe up here as I haven't cooked it for ages and can't remember exactly what to do!

Shepherd's Pie
* 4 large russet potatoes, diced * 1/2 - 1 cup soymilk * 1/2 teaspoon salt * 1/2 cup water or vegetable stock * 2 onions, chopped * 1 large bell pepper, diced * 2 carrots, sliced * 2 celery stalks, sliced * 1/2 pound (about 2 cups) mushrooms, sliced * 1 15-ounce can chopped tomatoes * 1 15-ounce can kidney beans, drained * 1/2 teaspoon paprika * 1/2 teaspoon black pepper * 2 tablespoons low-sodium soy sauce
Dice the potatoes and steam them until tender. Mash, adding enough soy milk to make them smooth and spreadable. Add salt to taste. Set aside.
In a large pot, heat the water or stock and cook the onions for 3 minutes. Add the pepper, carrots, and celery and cook for 5 minutes over medium heat. Add the mushrooms, then cover the pan and cook an additional 7 minutes, stirring occasionally. Add the

Put the vegetables into a 9” x 13” baking dish and spread the mashed potatoes evenly over the top. Sprinkle with paprika. Bake for 25 minutes, until hot and bubbly.
Shepherd's Pie
INGREDIENTS
o 1 1/2 cups dry TVP o 2 cups hot water o 1 T olive oil o 2 onions, chopped o 1 leek, chopped o 3 cloves garlic, crushed o 1 cup carrots, diced o 2 cups mushrooms, sliced o Splash red wine o Splash hot water o Splash soy sauce o 2 T tomato paste o 1 stock cube o Salt and pepper, to taste o 1 T herbs of choice (thyme, basil, oregano), chopped o 1 cup green beans, chopped o 1 cup celery, sliced o 1/4 cup flour o 1/2 cup water
Topping
o 6 medium potatoes, peeled and diced o 2 t vegan margarine o Splash of soy milk o Salt and pepper, to taste
METHOD Reconstitute the TVP with 1 cup hot water, allowing it to sit for 15 minutes. Add another cup of hot water, stir, then drain thoroughly.
Fry the onions, leek and garlic in the oil until just translucent. Add the carrots, mushrooms, tomato paste, stock cube, salt, pepper, herbs, a little red wine, soy sauce and water so nothing sticks. Put the lid on, and allow to cook over medium heat for about 15-20 minutes.
In the meantime, stick the potatoes in the microwave with a little water for about 8 minutes to cook. Drain and mash. Add milk, margarine, salt and pepper. Keep mashing until it's nice and smooth!
Once the carrots are almost cooked, add the drained TVP, celery and beans. Cook for another 5-10 minutes.
Mix the flour with the water, and add to the pot. Mix until thickened, and there's no liquid left in the pot.
Spoon the TVP mixture into the bottom of a nice large pan/bowl. Level it out, and dot the potato topping on to cover. Pop in the oven at 180C/350F for about 20-25 minutes, or until goldeny brown.
Shepherd's Pie
Preheat oven to 375F.
Saute in a bit of water over medium until soft [about 5 min]:
1 yellow onion, chopped 1 large carrot, chopped 4oz white mushrooms, chopped
Stir in and simmer until slightly thickened: can of tomatoes 1 tablespoon tomato paste 2 tablespoons tamari or other soy sauce 1 cup vegetable stock 1/2 teaspoon dried thyme 1/2 teaspoon marjoram Salt and freshly ground black pepper to taste 1 tablespoon cornstarch dissolved in 2 tablespoons water
Spoon into a 2 1/2 quart casserole dish and add:
3 veggie burgers, crumbled 1/2 cup frozen green peas, thawed 1/4 cup ground walnuts
Taste and adjust the seasonings. Spread 3 cups of mashed potatoes over top. Sprinkle with a bit of paprika, for color, and bake for 30 minutes, or until hot and bubbly. Serves 4.

1 of the recpies has something called TVP. what is TVP?

It stands for Textured Vegetable Protein and is usually soya in the form of 'mince' or sometimes chunks. Soya mince is made by a number of people, I think Realeat do one and so do Redwoods.

I am always looking for new recipes, dint want to bore the tribe to much. Made the pie today but changed a few things around. Added more carrots, peppers, used mixed beans instead of kidney beans because kidneys beans are evil, added gravy granules, took out mushrooms and celery umm it doesn't look anything like the above now but anyway it was lovely and the organic potatoes i used were fantastic mashed.

Ok. 1 onion 2 peppers tin of chopped tomatoes 1 tin full of water (just use the tom tin) 1 stock cube tin of mixed beans 4 carrots some tomato puree A sprinkle of mixed herbs some gravy granules Mash potatoes.
Just fry the onions and peppers in a pan until nearly tender, add carrots. cook for about 3 minutes. Lob in the rest of the stuff except beans and gravy. Cook for about 15 minutes. Add beans and gravy and warm for another 2 minutes. Throw it into a Pyrex dish. Add mash and cook for 25 minutes in the oven. Grill for a bit to if you want a nice crispy topping.
