OK, I know the title is a song from the musical Oliver Twist, but it got you interested! ;D In order to see, get ideas, and judge how well we eat alongside other vegans, (and I apologise as this idea is used in just about every food and health forum I've seen, but for everyone's benefits, why don't we start a food log, so the idea is to post what we have eaten on the day we post. Who's going to begin?

OK I started off my day yesterday with:
Breakfast: 2 cups of rooibos tea and porridge
Mid-morning: 400mls freshly squeezed carrot juice
Lunch: 2 slices of sunflower and rye toast with marmalade, cup of fennel tea
Mid afternoon: Satsuma and cup of rooibos tea
Dinner: Large salad with kidney beans, butter beans, bean sprouts, garlic, sweetcorn, tomatoes, spring onions, beetroot and loads of other goodies and a jacket potato with spicy vegetable topping
Evening: Satsuma
Late evening: 400mls freshly squeezed carrot juice
Throughout day around 3 litres of water... am sure looking at this I drink too much liquid as altogether with the teas must come to around 4 and a half litres! No wonder I'm always in the loo!
All in all a pretty healthy day!

Have you tried going a few days without bread and similar products to see if the symptoms disappear? There are many bread alternatives and wheat free breads around now that are readily available in most supermarkets these days, you could try them, so you can still have your scrambled tofu on toast! Alternatively you could get some food intolerance tests done, but it would save you money if you could try eliminating the wheat from your diet yourself. Hope this helps!
