One of the things that really bothers me, and is sort of preventing me from taking the plunge is eggs. I love them. I read all this stuff about ener G eggs but I think this is something you don't get in the UK as I've never seen them about.
How would I make cakes or bind my veggie burgers? Or make egg sarnies? What tastes just as good as boiled egg and soldiers?
If anyone has any tips, I'd be really grateful!

You can get egg replacer which covers the binding thing, although I've generally found that most veggieburger mixes hold together ok on their own. Soya flour also does it to a certain extent as well.
You can get vegan easter eggs which is the most important thing cos it involves choccy... ;D

Mashed up tofu has a scrambled egg like texture. Mix in oil, salt, chives, and turmeric, and heat in a pan for a decent replacement.
1/4 inch slices of polenta (the wet vacuum packed stuff) basted in oil and baked until crispy and going golden on the edges make a tasty replacement for fried egg with a cooked breakfast, and can also be chopped up and used instead of egg in fried rice.
Egg replacer (including Ener G) is just a mix of starches and gums that try and replicate the effect that eggs have on baking. None of them try and replicate the taste or consistency of boiled or fried or scrambled eggs.
At the end of the day, for every egg-laying chicken, a day old male chick was (often brutally) murdered.

Slightly less disgusting than eating chicken periods, I have it on good authority that semen is very like raw egg.
Now I don't know whether it makes a good omelette or quiche, or indeed a light meringue or nice eggy sandwich, but it is a good vegan source of B12 and other trace nutrients.

I find avocado has an eggy taste when in a salad sarnie with some fresh wholegrain bread and egg free mayo *drools and misses wholegrain bread*
