I am a little confused as to your problem as leafy greens should help IBS not make it worse - but then everyone is different.
Usually when this sort of thing happens its due to other reasons.
It may be your new vegan diet is removing the toxins from other foods.
Problems with grains is very common.
I would suggest trying to clear your system first - drink 3 to 4 pints of filtered water per day as the chlorine really aggrivates IBS etc
avoid tea & coffee & all caffine - caffine drinks do not count as your water intake - avoid all alcohol too until things settle down
avoid all sweeteners and sulphites as these too are very toxic and make IBS worse
Take 2 table spoons of hemp oil twice per day - orgainc if you can
as this will help your system massively
hemp oil is full of calcium - protects the bones & joints and helps so many other problems inc IBS
a good walk or excercise for 30 mins a day will help your lymph gland to clear out the toxins
I imagine if you do this for 60 days you will feel better and then try re introducing foods for 5 days and see how they effect you
If you can eat only fruit in the morining with water until lunch as this will really help the process and speed things up increasing energy
Jucing will also help
it really sound s as your system is a bit off but follow this and it should get back to normal shortly
also a good probiotic from veganicity will help also
as for calcium - its in lots of fruit & veg and you dont need a massive amount

also - for anything like this I would see a chiropractor
you may not be in pain but a trapped nerve can cause IBS and digestive problams
