I am eating a hummous, braised tofu, tomato, cucumber and onion sandwich and some fairly unimaginative tinned soup.

I just made a very nice couscous with bits in. I used some dried wild mushrooms, saving the stock to make the actual couscous in (with a bit of tom puree added just because you can), gently fried them up while the couscous was doing its expandy sucking up the water thing, threw in some ready to eat sun dried toms, pickled chilis and black olives all chopped up to warm them through near the end.
Fluffed the couscous up, chucked the mushrooms and other bits in with some of the olive oil they were frying in, mixed it all together, realised I had twice as much as was decent, stopped caring about that exactly one microsecond later and scoffed the lot.
Using the mushroom stock meant it had a gorgeous aromatic mushroomy taste all the way through it, went nicely with the SDTs and the olives.
My top tip. If you ever use dried wild mushrooms ALWAYS save the stock and freeze it if you're not using it straight away.

I havent fancied a meal today, but picked at not particularly healthy things (comfort food - I have a cold and my tastebuds are a bit funny). I had fried bread and mushrooms for breakfast, then I had cereal with banana and saltanas, then nothing for ages. Just now I had soup and toast and I have baked a chocolate cherry cake.

That looks delicious Wabbit.
I'm having leftovers: leftover samosa with leftover stir fry, baked beans, cucumbers and radishes.
So wrong it's right.
