I put it in a roasting tin and bake it 'til it's slightly crispy, then wrap it in rice pancakes with plum sauce or black bean sauce, cucmbers and spring onions. Not particularly original, but very tasty.

It works very nicely in a stir fry too. But I accept second best to the plum sauce and pancakes idea from m'colleague above.

You could use it in any chinese recipe that calls for duck, but it's definitely best to crisp it in the oven first. I have a recipe book where they coat it in a mixture of soy sauce, blackstrap molasses and oil before baking. I found it a bit overpowering but it probably would have worked well with a smaller quantity of the marinade than I used.

It's made of gluten, Fezza. Isn't that one of your nasties?

It is gluten. I'm getting quite into using the braised tofu. I wasn't keen when I tried it when I first went vegan, but I eat quite a lot of it now Should be able to use it in similar ways to the mock duck

Oooh I didn't know it was gluten, thanks you two. I'm not sure if gluten is the problem, I've problems with a couple of gluten foods but not sure if it's them all *bits start to drop off*

Don't listen to him - it's lovely!
*Goes off to consult the rules to see if bad-mouthing mock duck is a bannable offence*
